Fit-out in full swing for Red Mill Rum’s new facility

Founded in 1933 by George “Bunny” Fesq, RED MILL RUM has deep roots in Sydney’s distilling history. Revived in 2020 by Bunny’s great-grandson, David Fesq, the brand now blends heritage with innovation—crafting premium rums aged in rare barrels sourced from around the world.
Their new home in White Bay, Rozelle, is more than just a warehouse. The repurposed industrial space supports the ongoing operations of a high-end rum distillery, rum storage, and a soon-to-open eatery—an exciting addition to Sydney’s inner west.
Goldfish & Bay is proud to contribute to this transformation. Working alongside project managers TPD Projects, our team is delivering hydraulic, electrical, and fire services design to support the client’s operational needs and staged approvals.
With a strong team behind the delivery—including planning support from Sky Planning and architectural input from Atoma Design —the project has already made waves, with features in Forbes, The Sydney Morning Herald, and the The Australian Financial Review.
While most of our recent posts have focused on new builds, this one brings a different kind of complexity—working within the constraints of an existing structure, adapting services, and keeping the process lean.
